Benefits
- One of the best plant sources of iron and magnesium in the Indian pantry
- High in fibre and protein
- Naturally gluten-free
- Warming quality, which is why bajra roti is a winter staple in Rajasthan, Gujarat and Haryana
- Magnesium supports heart and muscle function
- Slow-digesting starch keeps energy steady through the morning
Usage
- Knead with warm water into a soft, pliable dough; rest 10 minutes
- Pat the roti by hand or between two sheets of butter paper — bajra cracks if rolled hard
- Cook on a hot tawa and finish directly on the flame
- Eat hot with ghee, gur and white butter
- Also for thepla, khichdi, bhakri, or as a 20–30% blend into wheat atta
Ingredients
- 100% organic pearl millet flour (Pennisetum glaucum), stone-ground whole grain
- No blending with wheat or maida
Precautions
- Highly perishable; develops a bitter taste within weeks at room temperature
- Refrigerate immediately after opening and use within 4–6 weeks
- Do not use if the flour smells sharp or bitter
- Traditionally considered heating, so many people reduce it in peak summer
- Moderate intake with thyroid conditions; consult your doctor
- Add fibre gradually and drink enough water
