Benefits
- Sugarcane juice boiled down without refining, so the molasses stays in
- Retains iron, potassium, magnesium and calcium that get stripped out of white sugar
- No sulphur or chemical clarifying agents, which is why ours is darker than commercial gur
- Powder form dissolves faster than a block and is easier to measure
- Traditionally eaten after meals as a digestive and through winter for its warming quality
Usage
- Substitute for white sugar roughly 1:1 in tea, coffee, kheer, halwa, ladoo, chikki and baking
- Adjust to taste, since jaggery is slightly less sweet
- Add to hot liquids off the flame so it dissolves without scorching
- Classic pairings: with roti and ghee, in til ladoo, in bajra or ragi porridge
- In baking, reduce other liquids slightly to account for the moisture
Ingredients
- 100% organic sugarcane jaggery powder
- No sulphur, no bleaching agents, no chemical clarifiers, no added colour, no preservatives
Precautions
- Jaggery is still a sugar and raises blood glucose much like white sugar does
- People with diabetes should treat it as sugar and follow their doctor's or dietitian's guidance, not assume it is a free swap
- Keep overall intake moderate for weight and dental health
- Absorbs moisture readily and will clump or attract ants — store airtight and use a dry spoon
- Colour ranges from golden to dark brown by season and batch; darker is natural, not burnt
- Not suitable for infants under one year

The wheat flour feels so fresh and natural. The rotis stay soft for hours, and my family can actually taste the difference.

We've switched to Prakrti Pure pulses because they cook faster and have a richer taste. It feels like going back to traditional food.

The jaggery has become my go-to replacement for refined sugar in tea and sweets. It has a rich, authentic flavor without being overly sweet.
